Option to drop / strip attachments
Increasingly we are seeing inbound emails with images attached as part of the sender's email signature. As our app ignores attachments even if they are present, it would be nice to have the option to skip / drop attachments entirely... as in, not even bother including them in the POST to our server or uploading to S3.
I agree! A list of file types to ban or accept would be a great feature!
I also face this issue. I would like to identify the inline attachments from regular attachments, since I want to ignore only the inline attachments. (I am assuming the images in signature arrive as inline attachments with content id populated).

It would be nice for us to configure a list of always-banned attachments (i.e. "logo.png" or *.exe/*.bat/*.com/etc)

This would make a great addition to reduce delivery time to the server. We'd still incur the cost of receiving the larger messages on the CloudMailin side but we could at least speed up delivery to your app.
We'll look at the options for adding this.
